Cooking Instructions
All-Butter Pain au Chocolat
Spread out on a baking tray and leave to defrost and ‘prove’ overnight at room temperature.
Egg wash and bake in oven at 190°C/375°/Gas Mark 5 until golden brown (approximately 8-10 minutes).

All-Butter Croissant

Almond Croissant
Place on a baking tray and thaw for 30 minutes at room temperature. Then bake in a pre-heated oven at 180°C/350°F/Gas Mark 4 for 20-22 minutes until golden and cooked throughout.

Cookies (chocolate chip, double chocolate, white chocolate & pecan)
Place baking paper on a baking tray. Place the dough pucks (still frozen) on this with a space of 5 to 6 cm between each piece. Place the baking tray with cookies in a pre-heated oven up to 160°C/325°F/Gas Mark 3 and bake for approximately 20 minutes. Let the cookies cool down (15 to 20 minutes) before serving.

Blueberry Plait
Cook from frozen.
Pre-heat oven to 190°C/375°/Gas Mark 5, place on a baking tray and cook for approximately 20 minutes
until golden brown.

Cinnamon Swirls
Cook from frozen.
Place on a baking tray and oven cook for approximately 15 minutes, in a pre-heated oven at 190°C/375°F/Gas Mark 5 until pastry is golden and cooked throughout.

Chocolate Twists
Place on a baking tray and thaw slightly for around 30 minutes at room temperature. Cook for 18-22 minutes, in a pre-heated oven at 180°C/350°F/ Gas Mark 4 until pastry golden and cooked throughout.

Raspberry & White Chocolate Muffins
To defrost, remove from case and leave in pack at room temperature for approximately 2 hours, or until fully defrosted. Once defrosted, store in a sealed pack in a cool, dry place away from direct sunlight and use within 48 hours.
Pizza/Focaccia Dough
Place the frozen dough in a sealable plastic food container and leave it at room temperature, for approximately 4 hours, until the dough is clearly increasing in size. Alternatively place the frozen dough on a tray in the fridge overnight. Remove from the fridge about an hour before planning to use it, place in a bowl and cover the bowl with a slightly damp cloth or cling film for approximately 1 hour while the dough proves and grows in size.
For Pizza hand stretch or roll out to around 8-9 inches then simply add your toppings to create a ‘restaurant quality’ pizza.
Or for a fresh Focaccia loaf kneed the proven dough slightly, make it the size and shape of your choice, drizzle with a good slug of extra virgin olive oil and sprinkle with rock salt, rosemary and garlic then bake for around 10-12 minutes at 200°C/400°F/Gas Mark 6. To make a larger loaf combine a number of proven rounds of dough.

Pizza Sourdough Balls
For best results place the dough balls in a tray, cover to prevent drying out and place in a refrigerator between 0 and +8 degrees for at least 12 hours. Should the surface of the dough balls become dry, moisten with a mist of water. Remove from the fridge 2 hours before use and bring them to room temperature and allow to double in size.
Once the dough ball has reached this stage it can be refrigerated to keep stable until required for use or used straight away. The traditional method of hand stretching produces the best result, but a rolling pin can also be used until a base of the required size and thickness is achieved. For best results use a mixture of 70% Semolina flour and 30% white flour to stretch your dough in (or pin).
Place the stretched dough in a suitable sized pizza screen. Spread the pizza sauce onto the base leaving (6mm) from the edge, sprinkle a little grated cheese and then add the topping of your choice.
Remember to place cooked topping on first and the raw topping last, this will ensure that the topping is perfectly cooked. Top up with grated cheese and cook until the cheese is golden brown. When bake ensure a minimum core temperature of 96 degrees is attained for at least 1 minute.
Sweet Potato Chips
Cook from frozen.
OVEN: Pre-heat the oven at 220°C/425°F/Gas Mark 7. Spread the preferred quantity of product evenly on the baking tray (preferably on baking paper). Place the tray in the middle of the oven. Bake the product for about 15-20 minutes. Meanwhile turn them until golden orange and crispy.
If a small quantity of less than 500g, cook for slightly less time.
DEEP FRY: Pre-heat frying oil to 175°C. Fry for about 2½-3 minutes until golden orange and crispy.

Spicy Potato Wedges
Cook from frozen.
Oven: Pre-heat oven to 220°C/425°F/Gas Mark 7. Cook on a baking tray in the centre of the oven for about 15-20 minutes, turning occasionally, until golden yellow and crispy.
Deep Fry: Pre-heat the oil to 175°C/347°F, cook for about 3-4 minutes until golden yellow and crispy.
Shallow Fry: Heat some oil or butter in a frying pan and cook the wedges for about 10-15 minutes turning regularly until golden yellow and crispy.

Steak House Fries
Cook from frozen.
Bake in a pre-heated oven at 200°C/400°F/Gas Mark 6 for approx 20 minutes turning once until golden yellow and crispy.
Or deep fat fry for about 4 minutes until golden and cooked throughout.

Petit Pois Peas
Cook from frozen.
Simmer gently in lightly salted water with a sprig of fresh mint, until just tender. Drain and serve with a knob of butter and garnish with mint.
Or microwave from frozen with a knob of butter. Stir from time to time.
Or steam with a sprig of mint until tender.

Plain White Fishcake
Cook from frozen.
Deep fry: hot oil (180ºC/350ºF) for 4-5 minutes.
Shallow fry: medium heat for 6-7 minutes.

For best results deep fry from frozen in pre-heated oil at 180°C for 6-8 minutes or until golden brown.

Jumbo Fish Finger
For best results cook from frozen.
Deep Fry in preheated oil at 180°C for 7-9 minutes, leave to stand before serving.
Grill – Medium Grill, 12 – 15 mins, Turn once, cook until crisp and golden.
Always check the product is piping hot through before serving.

Breaded Pollock Fish Fingers (small)
This product is raw and must be fully cooked prior to consumption.
For best results always cook from frozen.

For best results cook from frozen.
Deep fry: Hot fat (180°C/350°F) for 3-4 minutes. Drain well.
Bake: Pre-heat oven to 230°C/425°F/Gas Mark 8. 16-18 minutes. Place in a single layer on a baking tray.
Grill: Pre-heat medium grill, place in single layer on base of grill pan for 12-14 minutes, turning occasionally. Appliances may vary. Always check product is piping hot throughout before serving.

Cook from frozen.

Vegan Sausage Rolls
1. Place on a baking tray in a preheated oven at 200 °C / 390 °F / Gas Mark 6.
